Gluten-free all-purpose baking flour (potato starch, tapioca flour, white sorghum flour), evaporated organic cane juice (sugar), unsalted butter, whole egg, whole milk, baking powder (sodium acid pyrophosphate, sodium bicarbonate, cornstarch, monocalcium phosphate), natural vanilla and lemon extracts. Icing: pure cane powdered sugar, water, natural lemon extract.
Gluten Free Nonnine
We use a special gluten-free cake flour to give this traditional and much loved cookie a softness with a touch of crunch. Lemon zest tempers the sweetness of the sugar (nothing tempers a grandma’s sweetness!).
This cookie brings to mind sweet memories of our nonna who used to dunk this cookie into her caffe latte in the morning. The flavor is subtle which allows it to pair well with coffee or tea.
